Simply Delectable Starters and Sauces

The uses for cooking with olive oil are endless. You can simply drizzle olive oil over salad as a dressing or use it as a no-hassle dipping sauce for bread. These delicious and healthy recipes are sure to impress you and your guests.

Kalamata Olive Pesto
Use as a condiment with fresh bread. Also tastes great with grilled chicken or as a garnish for any red pasta sauce

1 cup pitted Kalamata olives
3 peeled garlic cloves
½ bunch fresh cilantro (leaves only)
½ cup Phoenicia's Forte Olive Oil
Sea salt and pepper to taste
  1. Combine all ingredients in a blender or preferably a food processor
  2. Blend together until coarse and not smooth

Maple Balsamic Vinaigrette
Use as a salad dressing or marinade with chicken or beef

1 cup aged balsamic vinaigrette
4 cups Phoenicia's Forte Olive Oil
½ cup pure maple syrup
Sea salt and pepper to taste
  1. Combine all ingredients in a blender or food processor
  2. Blend together

Shiitake Vinaigrette
Use as a salad dressing served cold or warm on a spinach salad.  This can also be used as a marinade for salmon or chicken

1 cup aged balsamic vinegar
4 cups Phoenicia's Forte Olive Oil
1 tbsp chopped shallots
¼ cup soy sauce
1 tbsp Dijon mustard
1 cup pre-sliced and sautéed shiitake mushrooms
Sea salt and pepper to taste
  1. Combine all ingredients together in a blender or food processor
  2. Blend together until semi-smooth

Sesame Soy Vinaigrette
Can be used as a marinade for ahi tuna, fish and chicken, especially kabobs

2 cups soy sauce
1 cup Phoenicia’s Forte Olive Oil
½ cup rice vinegar
4 oz peeled and grated fresh ginger
2 tbsp honey
1 tsp chopped garlic
  1. Combine all ingredients together and enjoy!

Garlic Spread
This can be used alone on fresh bread or a side condiment with, pork, chicken, steak or fish

2 cups garlic cloves
½ cup Phoenicia’s Forte Olive Oil
Sea salt and pepper to taste
  1. Fill a saucepan halfway with water and set to boil.
  2. Once it is boiling, add garlic cloves
  3. Cook until soft, remove and cool
  4. In a blender or food processor, add garlic, olive oil, sea salt and pepper
  5. Blend until smooth (you may have to adjust the amount of olive oil depending on how thick or thin you would like your spread to be)

Hoummus
This popular Middle Eastern dish is appropriate before any Lebanese meal or simply as part of a party tray for any occasion.

16 oz can of chickpeas
¼ cup canned chickpea liquid
3 tbsp lemon juice
1 ½ tbsp tahini (sesame paste)
2 cloves of garlic
½ tsp salt
2 tbsp Phoenicia's Forte Olive Oil
Pita chips
  1. Combine all ingredients except olive oil in a blender or food processor
  2. Blend mixture until very smooth
  3. Spoon hoummus onto a platter and create a well in the middle
  4. Pour olive oil into well and serve with pita chips
